What’s Cooking this Week?

We talked about this Mediterranean Greek Dip on yesterday’s call and it sounds yummy! There’s something about a gooey dip that’s a crowd pleaser. The combo of the greek yogurt mixed with hummus makes this super healthy. Serve with store bought pita chips, make your own (so easy and healthier!), or slice up cucumber sticks.

Pesto Salmon

I made this salmon dish this week, and it was a winner! The tomatoes in the recipe caught my eye. It’s such a pretty dish, and the pesto really complements the flavor of the salmon. It’s also easy to make and very filling. It’s a great healthy dish to serve if you’re hosting this weekend or for a quick weeknight meal.

Spaghetti Squash with Chicken & Broccoli

A few of our members are loving spaghetti squash, so I thought I’d add this one in the mix. Consider adding this spaghetti squash recipe to your lineup after Memorial Day. It’s delicious and super filling. I try to have a spaghetti squash around because there’s so much you can do with it, and it feels like comfort food. For this recipe, use rotisserie chicken, grilled, or even leftovers. Add frozen or steamed broccoli and the light creamy sauce for a delicious, gluten-free, low-carb meal.

Healthy(ish) 8-Minute Cheesecake
  • 1/3 less fat cream cheese
  • 1/3 cup of sugar (monk fruit is what I use)
  • 1 tsp vanilla
  • Tub of cool whip
  • 1 premade graham cracker crust

Refrigerate for a few hours (if you can hold out!).
