Sunday Playbook: May 18, 2025

May is crazy for us, how about you? End-of-school chaos, travel, graduation, and zero time to think about what’s for dinner. This week, I’m keeping it real with cheap, easy, and healthy meals the whole family will actually eat. These are fast to prep, kind to your grocery tab, and perfect keeping is simple and healthy. Have a great week and join me Monday at noon ET for a check in. Info below.

What’s Cooking this Week?

Instant Pot Spaghetti and Turkey Meatballs

This one-pot Instant Pot Spaghetti and Turkey Meatballs is a fast and easy dish the kids and whole family will love! It’s made healthier with whole wheat spaghetti and turkey meatballs. Try with a protein pasta as an alternative.

Rustle up a butter bean, tomato and feta stew for a quick and healthy midweek meal. Enjoy with toasted sourdough on the side to mop up all the sauce. Add rotisserie chicken to bump up the protein.

One-Pan Chicken And Quinoa

Here’s a quick and easy dinner that’s high in protein and takes very little effort. The chili powder and cayenne add a nice kick. Of course, feel free to use a little less of either spice if you prefer.

Parmesan Tilapia

This parmesan tilapia is a total crowd-pleaser that is packed with Italian flavor and a bit of a bite thanks to crushed red pepper.  Serve it with rice and veggies to round out the meal.
