May was a total butt-kicker for me—anyone else? I’m more than ready to get Summer off the ground. It’s the perfect time to reset and refresh your meal routine with fresh, light, and healthy recipes that keep things simple. This week, I’m sharing nutrient-packed meals that are satisfying, easy to prep, and full of fresh flavors. Whether you’re trying to boost fiber or just lighten things up, these ideas are all about keeping you and your family energized.

What’s Cooking this Week?

Greek-Inspired Pita Pockets

These pita pockets are look like a lifesaver. They are stuffed with chickpeas, crisp veggies, and a tangy tzatziki- light, fresh, and take just minutes to throw together.

Sweet & Spicy Salmon

This sweet & spicy salmon recipe is delicious! The decadent-tasting “good” fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill. It’s delicious, but can be discarded to save fat and calories. I make steamed brown rice and grilled zucchini to accompany the salmon rather than the slaw.
