This lightened-up Shepherd’s Pie recipe, layered with lean ground beef and veggies and topped with Yukon gold mashed potatoes, is perfect for meat-and-potato lovers! One serving has just 275 calories with 22 grams of protein and 5 grams of fiber. It’s a whole meal in one. This is also a great meal-prep option for the week too.

This baked chicken Parmesan is delicious! It’s super crispy without frying, using whole-wheat breadcrumbs and part-skim mozzarella. It’s a lighter take on a beloved Italian-American dish. It’s been in our mix for years!

Healthy Beef Stroganoff

This protein packed Healthy Beef Stroganoff is a lightened up & more nutrient dense take on the classic comfort meal. Seared sirloin steak, veggies, bone broth, and greek yogurt create the most flavorful sauce. Serve tossed with these healthy, higher protein egg noodles.

Quinoa Enchilada Casserole

This is a fantastic lightened-up, healthy enchilada bake that you can enjoy guilt-free, chockfull of quinoa, black beans and cheesy goodness. And the leftovers taste even better! We’ve been making this for a few years- double recipe so it lasts for a few days! I sometime add ground taco meat or my confetti chicken to bump up the protein. Rotisserie chicken works great too!

Healthy Tuna Noodle Casserole

This lightened up tuna noodle casserole is made with a creamy, light parmesan mushroom sauce, noodles, canned tuna and peas. It’s easy to customize to your taste preferences as well! Choose your own veggies, make it gluten-free, or go dairy-free with vegan butter or dairy free milk and parm.

Healthy Turkey Meatloaf

Meatloaf often gets a bad wrap, but it can actually be a really delicious and healthy meal! This recipe makes a really moist turkey meatloaf that has a ton of flavor thanks to some simple spices and a delicious ketchup and worcestershire sauce on top. Not a fan of ground turkey? Replace with lean ground beef instead.
