Happy Mother’s Day to all the moms! Enjoy this beautiful weekend- cheers! This week’s playbook includes some great Asian-themed recipes and my mom’s 8-minute cheesecake recipe. Check out other updates—new workouts on My Cafe too!
What’s Cooking this Week?
Slow Cooker Ginger Garlic Pork Tenderloin
This Ginger Garlic Pork Tenderloin is a low-effort Asian dish perfect for dinner! Whether you decide to slow cook until tender or use an Instant Pot, the simple recipe is both keto and low carb. The asian spice rub and ginger garlic sauce create a tender and juicy pork tenderloin that is the perfect combination of sweet and savory. The marinade is great for meal prepping, so consider doubling the ginger garlic recipe and save it for meals like chicken later in the week!

Sheet Pan Turkey Sausage and Vegetables
Try this Sheet Pan Turkey Sausage and Vegetables recipe for an easy, stress-free dinner for the whole family to enjoy! Use the lean, protein-packed Butterball Everyday Smoked Turkey Dinner Sausage, combine with vegetables like brussel sprouts, sweet potato, zucchini, broccoli florets, and top with olive oil and seasoning. Make sure to spread out the veggies so they don’t get soggy, using two pans helps, and line the pans with foil or parchment paper for easy cleanup.

Nana’s 8-Minute Cheesecake Recipe
There’s no better way to go into Mother’s Day than making my mom’s cheesecake. My kids call it, “Nana’s Cheesecake.” Warning- it’s addictive.
- 1/3 less fat cream cheese
- 1/3 cup of sugar (monk fruit is what I use)
- 1 tsp vanilla
- Tub of cool whip
- 1 premade graham cracker crust
Refrigerate for a few hours (if you can hold out!).
