What’s Cooking this Week?

Spicy Cajun Shrimp, Kale + Cauliflower Rice

This Spicy Cajun Shrimp, Kale + Cauliflower Rice is the perfect one-pot meal for the entire family. This recipe has bold, spicy cajun flavors and a tender “rice-like” cauliflower base. It’s easy to make and ready in as little as 30 minutes. Completely gluten-free and dairy-free too!

Chicken Parm Stuffed Sweet Potatoes

These cheesy chicken parm stuffed sweet potato boats are flavorful, saucy, and protein-rich. The filling tastes like a classic chicken parm, but no frying, oil, or breading is needed. They are saucy, cheesy, and made with rotisserie chicken. This is a super quick and easy dinner to pull off.

Loaded Veggie and Chicken Casserole

If you have leftover chicken from the recipe above, try it with this casserole. You can use any veggies you have on hand and clean out the fridge. This loaded veggie and chicken casserole from Clean Food Crush is delicious. It’s flavorful, super satisfying, and budget-friendly. Double it up for lunches or meals throughout the week. It freezes well, too.

On Monday’s call we’ll talk chat about these headlines- intermittent fasting and heart disease. Crazy stuff, right? If you didn’t see it, the American Heart Association released an article claiming that intermittent fasting, specifically eating within an 8-hour window and fasting for the other 16 hours of the day, is linked to a 91% increased risk for heart disease. This seems like a crazy headline, given the fact that intermittent fasting has been promoted as a way to burn fat, improve cellular repair processes, and even benefit heart health in the wellness community. So, how should we think about these headlines? Is there any truth to it?
