Best Brussel Sprout & Kale Salad
Rumor has it, this is the best kale salad ever! Just check out the comments. There are lots of fun substitutes for it, too. Depending on your mood, consider adding fresh blueberries instead of cranberries or shredded chicken to it! It’s gluten-free and dairy-free. In my experience, one of the keys to making a kale salad great is making sure you thinly shred the kale.

Umm, doesn’t this salad look amazing? Avocado Corn Tomato Salad with Creamy Cilantro-Lime Dressing is an easy side dish that will pair well with any weeknight dinner. It is also great for picnics, potlucks, and BBQ parties. The salad comes together in 30 minutes or less and works as an appetizer, side dish, or even as lunch. Make this salad in the summer or any time of year!

One of our members raved about this simple ground turkey recipe! It’s easy to make, satisfying, and an easy weeknight dinner. It’s made with 1lb. of lean ground turkey meat, veggies, and avocado. Add this one to your menu rotation! Double it so you have it for easy lunches.

Healthy Buffalo Chicken Spaghetti Squash Casserole
This recipe is on repeat for several member. It’s fantastic- low carb, high protein, and high volume, and there is cheesy goodness throughout. I love cooking with spaghetti squash. It is a nutritious alternative to traditional pasta, a low-calorie, high-fiber option rich in vitamins and minerals like vitamin C, manganese, and potassium. Use my Confetti Chicken recipe or switch up the protein with ground beef or turkey. A tutorial is also included on how to prepare and cook spaghetti squash.

Pasta!
Several members shared that they keep it simple and have the Carba Nada noodles on hand with a low-sugar sauce. Serve with a salad and viola! Even better, make this sauce for a home run. It’s a member favorite!

Asian Turkey Meatballs
I’ve made over 50 of these meatballs over the past few week. These Asian inspired meatballs are out of this world! Made with ground turkey, ginger, scallions, cilantro and sesame oil with a tangy sesame-lime dipping sauce.

Sheet Pan Greek Chicken
According to Erin and her mom, this Sheet Pan Greek Chicken from Every Last Bite is “off the charts!” It’s easy to make with less than 10 minutes of hands on prep. It’s a great all in one meal and is loaded with roasted peppers, tomatoes, artichokes and olives, all tossed in a yummy sauce and cooked with pieces of chicken.
Some members also love this fish version. This Sheet Pan Mediterranean Cod is not only visually stunning but absolutely delicious. It has a creamy texture and tastes rich yet light and fresh.
