Honey chipotle chicken skewers with pineapple are a must for summer grilling! Marinated pieces of sweet and spicy chicken are skewered with chunks of fresh juicy pineapple. Serve with a side of rice and enjoy this easy and flavorful meal.

Healthy Slow Cooker General Tso’s Chicken

Fakeout takeout at home, but make it in a slow cooker!  That’s the beauty of this recipe for Healthy Slow Cooker General Tso’s Chicken.  This recipe features chunks of chicken breast, lightly pan fried and then slow cooked in a sweet and savory sauce made with Hoisin sauce, brown sugar, soy sauce, ginger, and garlic. Perfect to feed a family or to prep for one for lunches for the week; serve with rice, cauliflower rice, and a vegetable.  Just like takeout, but healthier.

CrockPot Tuscan Garlic Chicken Thighs With Spinach and Sun-Dried Tomatoes

This crockpot recipe is a favorite because it’s anything but boring and healthy. It’s loaded with fresh garlic, spinach, and sun-dried tomatoes, and the parmesan sauce is so good. Try this out on your next busy weeknight!

Grilled Chicken Kabobs with Yogurt Sauce

This recipe is a delicious Lebanese-inspired summertime meal. We make it at least once a month, and even my picky kiddos love it! The sauce is made with cucumber, lemon juice, fresh mint, and dill added to yogurt. It’s a super simple sauce that goes perfectly with the grilled chicken.

15-Minute Mediterranean Chickpea Salad w/Grilled Chicken

This Mediterranean Salad is light, bright, and beautiful, and it’s easy to make. I use this recipe as a base and sometimes toss in shelled edamame and either the grilled chicken kababs (above) or this Greek marinade. Chickpeas are combined with crunchy cucumbers, sweet bell pepper, red onion, Kalamata olives, creamy avocado, salty feta cheese, and fresh herbs, all tossed in a light vinaigrette. Perfect for meal prep, lunch, or dinner!

Healthy Chicken Alfredo

Indulge in a guilt-free twist on classic Alfredo pasta by tossing zucchini noodles with leftover chicken and a lightened-up Alfredo sauce made with Greek yogurt and Parmesan cheese. Pair with one of these healthy pasta options. I like this dish with Carba-Nada Egg Fettuccine.
