What’s Cooking this Week?

Greek Flank Steak and Veggie Salad

This recipe is a family favorite! It has a nice crunch from the roasted cucumbers (yes, roasted cucumbers!) and chickpeas. Here are a couple of tips: add more veggies and double the marinade. Save a little bit to use as a salad dressing. Don’t waste it!

I’ve got to bring this one back around because many of you love it! According to Erin and her mom, this Sheet Pan Greek Chicken from Every Last Bite is “off the charts!” It’s easy to make with less than 10 minutes of hands on prep. It’s a great all in one meal and is loaded with roasted peppers, tomatoes, artichokes and olives, all tossed in a yummy sauce and cooked with pieces of chicken.

One Pan Turkey Sweet Potato Skillet

This meal is perfect for a quick, healthy weeknight dinner. It’s delicious, protein-packed, and makes great leftovers. It will go fast! Consider making a double batch or using two pounds of ground turkey instead of one. It’s also easy to swap ingredients depending on what you already have.

One Pan Cauliflower Fried Rice

Who doesn’t like fried rice?! This Cauliflower Fried Rice recipe is a great spin off the classic, take out version. It’s got tons of flavor! Add shredded rotisserie chicken for a protein boost.
