Taco Stuffed Zucchini Boats

Taco stuffed zucchini boats are a healthy, veggie-forward, Mexican-inspired meal. They’re light and fresh, yet surprisingly filling. If you have a few zucchini boats leftover, store them without the toppings (just the cooked zucchini and ground beef) in a storage container. They’ll keep for 3 to 4 days in the fridge.

Creamy Chicken Stuffed Peppers

This recipe is amazing! The filling is so good, I could eat it by itself. They also come together really quickly! Sometimes I use leftover Confetti Chicken (easy and tasty meal prep option) or shredded rotisserie chicken. If you want to make it a bit lighter, you can reduce the amount of cheese. Enjoy!

Stuffed Spaghetti Squash

These low-carb stuffed spaghetti squash boats are super flavorful. They are made with the ground meat of your choice, kale, red bell pepper, and a mix of rich spices. If you’re looking to speed up the process, you can cook the spaghetti squash in your instant pot.

Stuffed Chicken Breast

This Stuffed Chicken Breast recipe is on my list to make this week. I love the Big Man’s World recipes, and this one has over 1,000 5-star reviews. It has an awesome combination of chicken, spinach, cheese, and sun-dried tomatoes. You can prep it in advance by stuffing the chicken breasts the night before or even two days ahead. Ready in just 10 minutes, it’ll be a great option for a fast dinner.
