Hey gang! I hope you all are having a great weekend! I’m visiting my oldest at Clemson, so it’s an extra awesome one for me. 🧡 I want to thank you for being members of the Cafe. Garlic Parmesan Shrimp

Looking for a delicious option for Lent? These Garlic Parmesan Air Fryer Shrimp from Hungry Girl are a must-try! They’re crispy, flavorful, and super easy to make, especially if you have frozen shrimp on hand. Don’t worry if you don’t have an air fryer – you can bake them in the oven at 400°F for 8-10 minutes. The combination of garlic and Parmesan cheese adds a delicious twist to this classic dish.

Beef Skillet Enchiladas (Easy One-Pan Recipe)

I’m a sucker for Mexican dishes, especially messy nachos or enchiladas. This Beef Skillet Enchiladas recipe from Real Food Dietitians is made in one pan. This weeknight dinner is high in protein and features many nutritious ingredients, including lean ground beef, veggies, black beans, and corn. Plus, it’s budget-friendly and gluten-free. It calls for fresh peppers and zucchini, but don’t stress if you don’t have them. When I’m short on time or don’t have the veggies on hand, I’ve made it with them, and it’s just as good. Sometimes, I scratch the shredded cheese and sprinkle Cotija cheese on instead. Enjoy!

Asian Chicken Lettuce Wraps

These quick and easy Asian Lettuce Wraps from SkinnyTaste are delicious and have been in my meal prep rotation for years! Made with ground chicken, shiitake mushrooms, water chestnuts with a spicy hoisin sauce. I always double the recipe so I can have them for lunches and most of the time I don’t make the sauce (more time I usually don’t have and, in my opinion, they are good as is).

Monster Energy Clusters

I’m always experimenting with grab-and-go healthy snacks for me and my family. I shared this with my kids and some athletes; they were a huge hit! These come together quickly and have a good balance of protein, fat, and carbs, plus a little sweet pop that will make it a hit with kids and feel like a treat. No big energy spikes or crashes. Recipe below. Let me know what you think!

Ingredients:

  • 1 cup of mixed nuts (almonds, cashews, peanuts work best), crushed small
  • ½ cup coconut flakes, unsweetened
  • ½ cup (total) of chocolate chips, peanut butter chips, M&Ms
  • 2 eggs whites
  • 1/8 teaspoon salt

Directions:

  • Preheat the oven to 400.
  • Line a baking tray with parchment paper.
  • Combine the crushed nuts, coconut flakes, candies, egg whites, and a pinch of salt in a mixing bowl. Mix well.
  • Bake for 10-12 min until golden brown.
  • Remove from the oven and let the bites cool completely
  • Store in an airtight container in the refrigerator.

Note: I typically use the big bag of mixed nuts from Costco, but you can use whatever nuts you and your family prefer. Same with the candies. Try and keep the total candy to 1/2 cup, so it’s not too sweet or indulgent. If you tweak these, let me know how they turn out!

My Cafe- Changes & New Features Coming!

I made changes to My Cafe to make it easier for you to access the Sunday Playbook. There’s now a hotlink from the main page of My Cafe, and in Resources, it’s now one of the first things you see. A few new features are on the horizon! Hopefully, by next week, there will be an SMS feature so that you can opt-in for text messages from me. I’ll also be adding more grocery lists to make it even easier for you to stock your fridge. Check out this video for a run down!

New Workout

AMRP #2 Workout

This will get your heart pumping! In this workout, you’ll do as many rounds as possible (AMRP). You can do this workout at a gym or home. You’ll need a staircase and 2 sets of dumbbells- one on the heavier side and one that’s moderate. Set a timer for 15 minutes (or longer!) and do 10 reps of each exercise, then repeat. Try and do as many rounds as possible! The workout is in Resources under Workouts.
