What’s Cooking this Week?

Pan-Seared Halibut with Cherry Tomatoes & Basil

I love the simple preparation of this dish. The recipe works with any firm white fish. It’s pan-seared until golden and crisp with a quick sauté of sweet, garlicky cherry tomatoes on the side. Depending on how long you cook the tomatoes, they can be firm and fresh or soft and jammy. I’m cooking this up for friends and family on Saturday night!

Cuban Chicken & Black Bean Rice Bowls

One of our members said this bowl was a huge hit in her house this week! Cilantro-lime rice and Cuban style black beans serve as the base for the chicken tossed in a blend of fresh orange juice, lime juice, garlic, smoked paprika, oregano, and cumin. Thee bowls are then topped with mango salsa and some sweet fried plantains on the side (optional).

Balela Salad w/Twists

One of our members has been making this Balela salad with seared salmon and a few other twists! Use whatever beans (canned are okay- just rinse them) you like. They are great for an added fiber boost. Don’t forget to incorporate whole grains, such as tri-color quinoa, which adds a satisfying crunch and nutty flavor. And for the finishing touch, sprinkle on some feta cheese – our members swear by the Costco brand organic feta, which keeps well in the fridge for several days.
