This recipe is super creamy and delicious! Family-friendly and a good one for picky kiddos! Toss in some spinach or lighten up a touch with lite coconut milk.

One-Pot Chicken and Artichoke Cavatappi

If you’re an artichoke fan, definitely put this recipe on the list. The dish looks beautiful with chopped kale and sun-dried tomatoes! If you don’t have cavatappi, you can use rotini or high-protein pasta instead. Don’t forget to char the canned artichokes for a deeper flavor.

One Pot Cheesy Mushroom Spinach Beef Pasta

This cozy beef and spinach pasta recipe is filled with incredible, savory flavors while using super simple ingredients. It’s one of our go-to favorites and in the rotation once a month. Consider swapping the wide egg noodles for Carba-Nada noodles and adding sweet peas to give the dish more color.

Sausage and Veggies Skillet

This simple sausage and veggies skillet dinner features bell peppers, zucchini, corn, and fresh cilantro.  It’s a flexible recipe that is easy to adjust to whatever you have available. Use pre-cooked sausages like andouille sausage or cajun sausage. You can also use Italian sausage links or even crumbled sausage. (just make sure to cook through).

Brian’s Chicken Sausage Marinara

This simple one-pot meal was inspired by Erin’s husband, Brian. They had 4-5 chicken sausages from Costco in the freezer and decided to make a meal with them. They threw the sausages in the crockpot with sliced onions, peppers, mushrooms, and about 1 1/2 jars of Rao’s spaghetti sauce. This dish can be served with rice or pasta for a quick, flavorful, and nutritious dinner, perfect for busy nights when you need something simple and hearty.
