What’s Cooking this Week?

High-Protein Beef Chili

This beef chili recipe from Fit Foodie Finds is a simple and and really good (over 1,000 5 star reviews!). It includes lean ground beef, beans, and classic chili spices for a hearty, protein-packed meal. I like my chili thick and double the meat and sometimes combine 1 lb of lean ground beef and bison.

Healthy White Chicken Chili

This healthy White Chicken Chili recipe is a 30 minute meal with the option of making it 3 different ways. Whether made on the stovetop, in the Instant Pot or a slow cooker, this healthy chicken chili is easy and extremely popular for a reason! Serve with tortillas or almond flour cornbread, or avocado slices.

Quick & Easy Fish Stew

We make this fish stew often. It’s super tasty, comforting, and versatile enough for any (frozen) white fish or shrimp. The key ingredient to this stew is clam juice, which most grocery stores sell in shelf-stable eight-ounce bottles. We usually keep a couple in our pantry. Double or triple it, so you have leftovers.

Healthy Beef Stew

As the weather turns colder, there’s nothing more comforting than a homemade stew cooking on the stove. I made this Healthy Beef Stew recently and everybody raved. Tender pieces of beef come together with baby potatoes, carrots, onion, and a decadent combination of nutrient-dense ingredients. If you don’t think beef stew is “your thing”–you should think again.

My Go-To Meal Prep Low-Carb Turkey Chili

This low-carb turkey chili is healthy and such a crowd pleaser. We make a big batch almost every week. Sometimes I throw it over rice or pasta or serve it with air-fried corn tortillas. It is super simple- brown turkey, dump, and go in the crockpot. Not a fan of turkey? Sub out for ground meat. You can also dial up the spice by throwing in jalapeños or red pepper.
