This is an oldie butt goodie! This recipe for Fall Sheet Pan Pork Tenderloin with Vegetables makes dinner super quick and has minimal prep work. Alongside the pork tenderloin, this easy fall sheet pan meal features roasted, carrots, golden beets (can swap for red), red onion, Brussels Sprouts, and parsnips coated in a delicious honey balsamic glaze. It’s a great easy weeknight dinner.

Maple Roasted Pork Tenderloin with Fall Veggies
Here’s another great pork tenderloin recipe. It’s made with with apples and Brussel Sprouts is so delicious, super simple and just screams Fall. The pork is marinaded then given a hard sear in a hot skillet before being roasted with fall vegetables. Don’t skip the final step of making the pan sauce with all the leftover marinade and pork drippings. It really takes this recipe over the top.

In case you are not a meat eater or looking for a lighter alternative, try this roasted fish recipe– tender roasted fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Use halibut or any white fish.
