What’s Cooking this Week?

Healthy Lemon Yogurt Pound Cake

This Healthy Lemon Yogurt Pound Cake is perfect for breakfast, a snack, or dessert! I make a gluten-free, healthier version I think you’ll love. I’ll walk through options on Sunday’s call, but the gist is olive oil and 2% Greek yogurt replace butter, while egg whites help cut down on calories, fat, and cholesterol. I love swapping the Almond flour for a fiber boost; it adds more moisture, too. I also opt for monk fruit instead of sugar for sweetness. Bonus! You can freeze it too.

3-Ingredient Crock-Pot Chicken Tacos

This 3-Ingredient Crock-Pot Chicken Taco recipe is so simple and makes for an easy and delicious meal option. Doubling the recipe is a must for me every time! Tacos come to the rescue on hectic evenings without fail! Whether rolled in tortillas, served in bowls, or as a taco bar with your family’s favorite toppings. Personally, I like to whip up my own taco seasoning (recipe included below).

Make your taco seasoning- it’s simple and a lot healthier than store-bought. Try it and let me know what you think!

◦ 1 tablespoon chili powder
◦ 1/2 teaspoon garlic powder
◦ 1/2 teaspoon onion powder
◦ 1/2 teaspoon dried oregano
◦ 1/2 teaspoon paprika
◦ 1 1/2 teaspoons ground cumin
◦ 1 teaspoon sea salt
◦ 1/4 teaspoon black pepper

Healthy Turkey Burger

These healthy turkey burgers are a great addition to your meal prep routine and a nice change of pace from protein bowls. You can freeze them too! Simply reheat in a skillet with avocado oil for a quick, satisfying meal. Swap ground turkey for lean beef or chicken or whatever you prefer. For serving ideas, consider healthy bun options (find some with fiber and low/no sugar), wrap them in lettuce, or using them as a topper for salads.

Protein Brownie- Experiment on Sunday

For those of you who know me, I’ve been hunting for a good protein brownie for years with no luck-Ooey, goey browns with low sugar and some protein 😋. I’ll try this one out on Sunday and see how it goes! I plan on subbing 2% greek yogurt for the coconut oil and monk fruit sugar for the regular. Fingers crossed! Let me know if you’ve found one you like.
