I’m a sucker for Asian-inspired dishes and this one is amazing! The marinade is easy to prepare and packs a lot of flavor. The air fryer quickly cooks these chicken thighs, and they turn out really juicy. I like serving them with brown rice and roasted broccoli – I recommend making extra!

Instant Pot Minestrone Soup

I know it might seem odd to make soup in the Summer, but I love them year round, plus it was a great way to use up my zucchini from my garden. I recently came across this fantastic minestrone soup recipe that’s both hearty and low-calorie. And in the instant pot, it’s incredibly simple to prepare and delicious! To keep it high-protein, I swapped regular pasta for a high-protein alternative. I recommend leaving the pasta out until you reheat the soup to prevent it from getting soggy. This keeps the texture perfect for every bowl.
