Skinny Cajun Chicken Pasta
I had hoped to sneak out for a date with my husband on Friday night, but it didn’t work out. Instead, we stayed in and cooked up one of our favorite recipes: Cajun Chicken Pasta. This dish is loaded with chicken, bell peppers, red onion, mushrooms, and a light, creamy Cajun sauce. Since we were in the mood for seafood, I swapped the chicken for shrimp and threw in extra mushrooms. I recommend adding at least 2 teaspoons of Cajun seasoning and sprinkling extra on the veggies while cooking. My husband chose linguine for his pasta, while I opted for this one.

Teriyaki Chicken Thighs
Looking for a change in your chicken routine? Boneless, skinless chicken thighs are a nice change of pace from chicken breasts. While both thighs and breasts offer lean protein, thighs have slightly more fat but also provide extra nutrients like iron, zinc, and B vitamins. They’re a fast-cooking alternative, too- only 10 minutes in the oven. Try them in recipes like this Teriyaki Chicken Recipe for a delicious and nutritious meal.

Healthy Sloppy Joes
Who doesn’t love a sloppy joe?! They’re versatile, kid-friendly, and perfect for meal prep. I often double this recipe so my whole family can eat it throughout the week for lunches and dinners. My son even takes this to school! Consider swapping lean ground beef with 93/7 ground turkey. You can customize by adding or skipping beans based on your preference. The bun matters! This Aunt Millie’s option is soft and has decent macros, and this Brownberry Keto bun is a higher fiber option.

Spinach, Mushroom, and Feta Crustless Quiche
I love a good challenge, especially when it comes to healthy food options. A member reached out with this request, and I found this yummy, crustless- gluten-free quiche. It’s filling, full of vegetables, and won’t leave you with a carb hangover. Eat it for lunch or dinner.
