Marinated Steak Kabobs
These Marinated Steak Kabobs are a great, well-rounded, nutritious dish for a weeknight or even for entertaining. Keep in mind they’ll go quickly, so you may want to do a double batch. Top sirloin steak is one of the leanest cuts of beef, but the marinade also works well with chicken. Consider swapping the soy for coconut aminos instead of soy sauce.

Arugula, Chickpea and Avocado Salad with Feta
I’m loving this easy Arugula, Chickpea and Avocado Salad with feta. It only takes about 15 minutes to prep and is full of flavor! Juicy tomatoes, crunchy cucumbers, fresh herbs and more make this so fresh and delicious! Add grilled shrimp or chicken to amp up the protein. It will be a new favorite way to get your veggies in.

Grilled Lemon Herb Chicken Avocado Orzo Salad
This Grilled Lemon Herb Chicken Avocado Orzo Salad is the perfect summer dinner salad. It’s almost no-cook and comes together quickly and easily. Grilled chicken tossed with a lemony herb dressing, orzo pasta, crispy bacon, and creamy avocado. It’s colorful and so delicious. I often swap the orzo with healthier options like lupini beans, toasted quinoa, or farro. I prefer my Aunt Sue’s homemade balsamic vinaigrette (on everything)- recipe below. Enjoy this for dinner and save the leftovers for lunch. Warm or cold, it’s good!
