Chicken Caprese Skewers
Here’s a perfect summer recipe that’s anything but boring! These caprese skewers are a unique twist on the classic dish. The caprese flavor combination is always a winner, and I’m excited to use some of my cherry tomatoes and basil from my garden. You get all the flavors plus the bonus of serving them skewer-style, which always makes food better, right? I also love how these chicken skewers come together in about 30 minutes. And don’t forget to try the homemade pesto- it’s good!

Salsa Chicken and Cauliflower Rice Skillet
This Salsa Chicken and Cauliflower Rice Skillet is a quick, easy to make and healthy dinner! It’s seasoned with Mexican spices and your favorite salsa and perfect for busy nights! Add more chicken and the whole can of black beans to stretch this so you have leftovers throughout the week.

Burger Bowls
We make burger bowls at least once a week. I make sure to brown at least 3 pounds of lean grass-fed beef for my crew. Beef burger bowls or burger salads are a fun and easy dinner that the entire family will love! Make it with a salad base of fresh green lettuce, juicy tomatoes, avocados, and red onions- or whatever salad ingredients your family loves. Top with some beef, pickles, a sprinkle of shredded cheese to complete the dish. We save extra Chik-Fil-A sauces and use them as a topper sometimes.

Lemon Garlic Flank Steak
I’ve shared this before, but it’s been a while. I made this last Saturday for friends, and they said it was some of the best steak they’ve ever had. I used skirt steak, and it was awesome! Make sure to let your steak come up to room temp before seasoning. I let this simple marinade sit on the steak for about 30 min- that’s it! I made an extra one; my kids had bowls and fajitas this week. It’s what’s for dinner (again) tonight too.
