What’s Cooking this Week?

360+ Healthy Lunch Ideas

This article features a ton of school lunch ideas that focus on using whole, unprocessed foods. I like how you can search lunch recipes by type. There’s also a “recipe” format that helps provide inspiration on new ideas and what to purchase at the store.

Rotisserie Chicken Cobb Salad

I have 2 chickens in the oven as I write this and plan on using the leftovers to make a Rotisserie Chicken Cobb salad for lunches this week. It can be served on its own, in lettuce cups, or in a low carb wrap. The dressing is good! It’s made with Greek yogurt and a little blue cheese (or feta if you want to switch it up!).

Buffalo Chicken Slaw

Buffalo Chicken Slaw is a quick and easy high-protein meal prep option for lunches. You can use leftover chicken or a store-bought rotisserie chicken. This recipe makes extra sauce, which you can use as a dip or spread, making it versatile and convenient for multiple meals. The extra sauce can also be used for another batch of the slaw.
