What’s Cooking this Week?

Best Greek Salad

Even if you’re not a fan of Greek salad, you have to try the chicken! If I don’t feel like grilling, I’ll simply bake the thighs at 400°F for about 10-15 minutes, depending on the thickness. Everything about this Greek salad makes it a 5-star recipe. It’s made with grilled, juicy chicken thighs and the most heavenly tzatziki dressing.

High- Protein Egg Salad

Don’t miss out on one of our members’ favorite high-protein egg salad recipe. It’s a hit for a reason! I’ve made a version with rotisserie chicken, and it’s absolutely delicious. Enjoy on on a toasted Thomas’s multi grain English muffin, cucumber slices, or hallowed out mini or bell peppers. If you’re looking for a foolproof way to hard-boil eggs, try this technique. I also like to add a splash of white vinegar to the boiling water. It seems to do the trick so shells peel off easily. Recipe below!

  • 2 hard boiled eggs mashed
  • ½ avocado mashed
  • ½ cup Good Culture cottage cheese

Mix together and top with everything bagel seasoning.

Creamy Avocado Alfredo

This is creamy Avocado Alfredo is another member favorite! This dish tastes just like the classic Alfredo dish you love, but with the addition of creamy avocado instead of added butter or oil. To lighten this up, replace the heavy cream with 2% Fairlife milk and thicken it with a small amount of flour or cornstarch. For every cup of milk, whisk in 1-2 tablespoons of flour or cornstarch, cook it until it thickens, and then add it to the sauce. Swap regular pasta for Carba-Nada to boost protein and fiber.

Mediterranean Farro Salad with Spiced Chickpeas

Have you ever tried farro? It’s an ancient grain with a delightfully chewy texture and a rich, nutty flavor. Farro is packed with protein and fiber but has a neutral taste, making it a versatile addition to salads, bowls, or as a side. For an extra boost of flavor, try cooking it in low-sodium beef or bone broth. Adapt this recipe by to suit your preferences by switching up legumes and other ingredients. It keeps well for days, making it a good option for lunches throughout the week.
