Use any leftover Thanksgiving turkey to make this high-protein slaw. You can also use low-fat ground turkey or chicken. This recipe is simple, easy, and great to have in the mix for healthy lunches and dinners.

Ingredients

  • About 2 lbs of white turkey meat from Thanksgiving or 2 lbs of ground turkey or chicken
  • 2 TB of light soy sauce
  • 1 tsp of ground ginger
  • 1 tsp of sesame oil
  • 1 1/2 tsp of chopped garlic
  • 2 green onions, chopped
  • 1/2- 1 tsp of red pepper flakes 
  • 2 bags of cole slaw mix (no dressing, just the cabbage)

Brown ground turkey or chicken. Skip this step if using leftover turkey from Thanksgiving. Heat sesame oil and soy in a large skillet. Sauté garlic for 1 minute. Add sole slaw mixed and cook for approximately 10 minutes (or longer) until cooked down. Add protein and stir until combined.
