Need inspiration for game day snacks? Try these healthy steak bites and pair with roasted vegetables. These aren’t just any roasted vegetables. The roasted red pepper and crunch from the toasted quinoa make this dish elevated. These snacks will help you keep it on the healthy side and will be a hit on game day for sure!

Ingredients

  • 1- 2 Lbs brussel sprouts cut in half
  • 1/2 Cup of sliced almonds
  • 1/2 Cup of uncooked quinoa
  • Approx 3-4 TB of olive oil
  • 1/2 Cup of jarred roasted red peppers in olive oil chopped
  • 1 Minced shallot
  • 3-4 Chopped scallions
  • Handful of crumbled feta
  • Squeeze of fresh lemon
  • Pinch or 2 Salt and pepper

Instructions

Toss brussel sprouts in olive oil, sprinkle with salt, and roast at 400 degrees for 10-12 minutes until brown and toasty.

Heat 1-2 tablespoons of olive in a pan on the stove. Toast almonds and quinoa until they are a nice brown color.

These healthy game day snacks are still yummy at room temperature. I always make extra flank steak so I can toss the steak bites in salads and stir fries throughout the week.
