There’s no better way to celebrate and honor my mom than to make one of her favorite dishes. This quiche was one of her go-to recipes to serve and share with friends. It is quick and easy to prepare and so good!
Cathy’s Crab Quiche
– 1/2 cup of mayo
– 1/2 cup of milk
– 2 TB flour
– 2 beaten eggs
– 2 cans of flaked crab meat, drained
– 8 oz of shredded swiss
– 1/3 cup of chopped green onion
– 9-inch ready-made frozen pie shell
Preheat the oven to 350 degrees. Combine flour, mayo, eggs, and milk. Stir in crabmeat, cheese, and green onion. Plop the mixture in the frozen pie shell (do not pre-bake). Bake on the bottom rack for 40-45 min until the top is golden brown.
Ways to lighten up:
– Go crustless
– Use low fat (not fat-free) milk and mayo
