Protein Vanilla Cheesecake Overnight Oats
Ingredients
- ¼ cup whole oats
- 1 tsp chia seeds
- ¼ tsp vanilla extract
- 1 scoop vanilla protein powder
- ½ cup protein milk (Fairlife is what I typically use)
- ½ cup 0% plain Greek yogurt
- 1TB 1/3 less fat cream cheese
- 1 tsp honey
- Lemon zest (optional)

Directions
- In a bowl combine oats, chia seeds, vanilla extract, salt, protein powder, and milk. Stir well.
- In a separate bowl, soften the cream cheese (microwave for 20 seconds on low or leave at room temperature for 15 minutes).
- Stir in Greek yogurt and honey until smooth and creamy.
- To assemble: Layer the Greek yogurt mixture in the bottom of the jar (or martini glass), followed by the soaked oats. Top with another dollop of Greek yogurt and a sprinkle of lemon zest for an extra pop of flavor (optional).
Tips:
- Feel free to experiment with different protein powder flavors! Chocolate, strawberry, or peanut butter would all be delicious options.
- Top your overnight oats with fresh berries, chopped nuts, or a drizzle of nut butter for added variety and texture.
- This recipe is easily doubled or tripled to prepare for the week ahead.
