Mediterranean is one of my favorite cuisines! This One-Pan Mediterranean Chicken is a quick, protein-packed meal filled with fresh vegetables and savory spices and feta cheese (yum!). Ready in under 20 minutes, it’s the perfect healthy weeknight dinner.
One-Pan Mediterranean Chicken
Ingredients
- 1 medium eggplant, chopped
- 1-2 lbs boneless chicken breasts, cut into small pieces
- 2 cans of diced tomatoes
- 1 tsp tomato paste
- 1/2 cup of carrots, shredded
- ½ cup zucchini, chopped
- ½ cup whole olives
- 2 garlic cloves, minced
- 2 scallions, sliced
- 2 Tbsp olive oil, divided
- ½ cup feta cheese, crumbled
- 1 tsp dried basil
- ½ tsp ground coriander
- ½ tsp crushed red pepper
- Salt and pepper
Directions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Saute the garlic for a 1-2 minutes. Add the chicken and cook until the chicken is browned.
- Add the eggplant and cook for about 4-5 minutes.
- Add the canned tomatoes, cover the skillet, and let everything cook for another 5 minutes.
- Stir in the tomato paste. Add veggies and spices and simmer for 3-5 minutes.
- Fold in feta and olives and let sit for 3 minutes.
- Season with salt and pepper to taste.
