Mediterranean is one of my favorite cuisines! This One-Pan Mediterranean Chicken is a quick, protein-packed meal filled with fresh vegetables and savory spices and feta cheese (yum!). Ready in under 20 minutes, it’s the perfect healthy weeknight dinner.

One-Pan Mediterranean Chicken

Ingredients

  • 1 medium eggplant, chopped
  • 1-2 lbs boneless chicken breasts, cut into small pieces
  • 2 cans of diced tomatoes
  • 1 tsp tomato paste
  • 1/2 cup of carrots, shredded
  • ½ cup zucchini, chopped
  • ½ cup whole olives
  • 2 garlic cloves, minced
  • 2 scallions, sliced
  • 2 Tbsp olive oil, divided
  • ½ cup feta cheese, crumbled
  • 1 tsp dried basil
  • ½ tsp ground coriander
  • ½ tsp crushed red pepper
  • Salt and pepper

Directions

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Saute the garlic for a 1-2 minutes. Add the chicken and cook until the chicken is browned.
  • Add the eggplant and cook for about 4-5 minutes.
  • Add the canned tomatoes, cover the skillet, and let everything cook for another 5 minutes.
  • Stir in the tomato paste. Add veggies and spices and simmer for 3-5  minutes.
  • Fold in feta and olives and let sit for 3 minutes.
  • Season with salt and pepper to taste.
