Cozy Beef Soup Recipe
Ingredients
- 1 LB of organic grass-fed beef
- 1 tsp of garlic powder
- 1 tsp of paprika, 1 egg
- 1/2 tsp of oregano
- 1/2 tsp of pepper
- 1/2 tsp of salt
- 1 tsp of crushed garlic
- 6 cups of low sodium beef broth
- Optional: 1/2 tsp of red pepper, bunch of kale chopped, a couple handfuls of mushrooms
Instructions
Before you make the meatballs, get the broth and garlic warming on high heat in a large crockpot or stockpot.
To make the meatballs, using a large bowl combine 1 LB of Organic Grass-fed beef, 1 tsp of garlic powder, 1 tsp of paprika, 1 egg, 1/2 tsp of oregano, 1/2 tsp of pepper, and 1/2 tsp of salt. Mix well and form the mixture into small meatballs (think bite size, like how you make for wedding soup).
Next, gently place the meatballs into the broth, reduce the heat to low, and cook on low for 4-6 hours. If you want to add more heat to your soup, feel free to add some red pepper flakes.
After an hour before serving, add some finely chopped kale into the soup. Cook until the kale is soft. Serve hot and enjoy!
Consider doubling this recipe! Other ideas for this soup include adding some starchy vegetables like potatoes, carrots, or turnips. You can also add whole grains like brown rice or quinoa to make it a more complete meal.
